There are two things that I obsess about in life , Sophia and food. Now Sophia’s only down side is her draining our bank account with her oh so many health issues, but the food obsession has oh so many other drawbacks. Living in the Charleston area creates a whole new problem. There are some of the most delightfully , delicious restaurants to eat at and very few of them have light options on the menu and if they do, how can one pass up crab cakes, hush puppies, friend oysters etc. They even fry up pickles around here. Not to mention my absolute favorite southern dessert, coconut cake! It can be hard to resist all of these temptations so the Hubby and I have been trying to eat healthier MOST of the time. It has actually been fun trying out some new health wise recipes. I love sweets so that has been a bit of a challenge but I did find this recipe for pumpkin pie smoothies and I thought I would share it with you.
Pumpkin Pie Smoothie
½ Cup Canned Pumpkin(not pie filling)
¾ Cup Vanilla Low Fat Yogurt
½ Cup Skim Milk
5 Ice Cubes
Couple of sprinkles of Pumpkin Pie Spice ( to taste)
½ Tablespoon of Splenda ( if you choose)
Crush ice in blender and then add remaining ingredients. Blend until smooth.
